I'm a big fan of anime and my personal favorites are:
Spirited Away (Movie)
Mushishi (Series)
Mononoke (Series)
Paprika (Movie)
But I wanna see more, and I cant seem to find any one intersting (judged by trailers and my scepsis) - please list some recommendations!

I agree with Psyh's recommendation of Steins;Gate, if you like shows that have unpredictable outcomes that it feels like you're been trolled, Then I recommend Level E, a sci-fi comedy that feels very much to the man in black's movies/TV series.

Cowboy Bebop & FLCL are good and easy to just sit down and watch.
Neon Genesis Evangelion is a personal favorite of mine, but it might be a pain to watch without someone whos familiar with the series to consult. It gets pretty confusing, especially by the end. That said, The End of Evangelion is probably my favorite animated movie of all time.
Also can recommend The Melancholy of Haruhi Suzumiya and Gurren Lagann.
FLCL seems to be common admiration here, ill definitly look at it !

-Not your typical anime (not made in japan), but Code Lyoko is a good one. It's considered French anime. There is an English dubbed version out.
